Dah lama x buat muffin rasanya...... eh ya ke???? And as usual.....sapa yg suka muffin yg padat dan lembap, mmg sesuai ler resipi ni.....dan mmg kena maklum ler, tekstur muffin x sama dengan cupcake @ cake....sbb ia lebih berat......and of course x gebu.....disebabkan teknik gaul muffin ni.....muffin yg lebih gebu dihasilkan dr teknik menggunakan mixer (seperti kena mix mentega dengan gula terlebih dahulu)......and as usual, kerana malas......kita main campak2 dan gaul sahaja.......cara yang paling mudah.....

Sedikit petikan:-

"Don't over mix the batter and muffin batter should be just barely mixed. As soon as all the flour is moist, stop! It will look lumpy -- this is what you want. If you need to add filling to the ingredients, stop folding and add the fillings. If you have over-mixed the muffin batter, the tops will be flat, you will find tunnels of air bubbles running through the muffins and the finished muffins will be dry"

Ok.....so understood ler yer.....muffin not like cupcakes to be dry and spongy. Teksturnya adalah padat dan lembap (terutama jika ada penggunaan susu dan sebagainya). However, do take note..... Muffin is at their best fresh from the oven......

340 gm tepung serbaguna/tepung gandum
1 sudu teh baking powder
1/4 sudu teh garam
185 gm gula castor
2 biji telur
190 gm susu segar

1 sudu teh esen peppermint
1/2 sudu teh pewarna hijau
100 gm butter (jika guna salted butter, omit garam)

Filling
100 gm chocolate chips

Topping
100 gm mini chocolate chips

Cara

Ayak tepung, garam dan baking powder. Masukkan ke dalam bekas dan campur gula. Gaul rata sebentar. Sementara itu, telur + susu segar + esen dan pewarna dicampur sekali dalam satu bekas lain. Butter pula dicairkan. Kedua bahan ini dituang ke dalam bekas tepung tadi. Gaul rata sekejap sahaja menggunakan sudu. Kemudian masukkan chocolate chips. Kaup 3-4 kali sahaja biar rata. Kemudian masukkan ke dalam acuan 3/4 penuh dan tabur chocolate chips. Bakar selama 20-25 minit pada suhu 160-170'C.
